I’m obsessed with the Bailey’s mug cake I discovered on Kirbie’s Cravings. Unfortunately there’s a weird part of me that feels I shouldn’t have both cake AND liquor for dinner on weekdays. But I really wanted a cake tonight.
Today was a damn good day for me. I totally killed it today, and dammit I earned a cake for dinner!
We’ve had a partial box of Pillsbury Funfetti mix cake mix in the pantry for a while and I was always scared to use it because I couldn’t remember if we halved the the recipe or thirded it…
On a whim I thought, “Maybe I have the creative and [adjective] abilities to DIY some mug cake up in Hea.”
Lo and behold, I did!
CHECK THIS RECIPE FOR A SINGLE SERVING OF FUNFETTI CAKE IN A MUG FOR “DAYS LIKE THIS”:
INGREDIENTS
- 6 tbsp Funfetti mix
- 1 tbsp oil
- 2 tbsp water
- 1 egg
PROCESS
- Mix it in a large mug with a fork.
- Wash your fork.
- Microwave your mug of batter for a minute and 30 seconds or a minute and 45 seconds depending on its power.
- EAT THAT MESS! (careful, it’s hot)
Personally, I think the texture was way better than the from scratch cakes and totally spot on with what box Funfetti cake should be.
